Providing higher quality packaged products and extending shelf life are two of the main goals of the agricultural and food processing industries. Accomplishing these goals requires a multi-intervention program including a good HACCP program with proper cleaning and sanitizing SSOPs. Stepping up this program means including a plan for direct microbial intervention of the food product itself. Two of the best products on the market for direct microbial intervention of certain types of foods are Keeper ® and Keeper Professional ®.
Keeper ® and Keeper Professional ® are more commonly known as Acidified Sodium Chlorite (ASC) and they are very effective food contact sanitizers for the Red Meat, Seafood, Poultry, Fruit and Vegetable industries. Many new regulatory approvals have been granted for the use of ASC which are specifically related to these particular industries.
In certain industries Keeper ® and Keeper Professional ® can be used at concentrations lower than the federally regulated lower limit of 500 ppm so long as good efficacy is maintained. These special approvals are called out in Food Contact Notices (FCNs) which are written by the Department of Health and Human Services (a division of the Food and Drug Administration).
Keeper ® and Keeper Professional ® both provide high, broad spectrum antimicrobial efficacy but do not effect the organoleptic properties of the food item to which they are applied. If you are a farmer preparing your harvest for the public or a processor, or you are a food processor, Keeper ® and Keeper Professional ® will help you provide a higher quality, longer lasting product.
